German Cucumber Salad


This is my mom's recipe. We used to have this as a side dish with dinner sometimes, or it makes a great lunch or snack. It's pretty easy to make once you figure out what tool to use to slice the cucumber thinly enough.

Ingredients:

2 cucumbers, peeled and then sliced very thin and squeezed dry
1/4 cup vinegar
1/4 cup water
2 Tbsp light sour cream
1/2 tsp ground black pepper

Combine all ingredients in a bowl and mix well. Serve. Feeds 4-5 people.

  1. Another version uses about 2 to 3 times more sour cream and adds some fresh chopped dill to taste. Serve really cold in summer. Another tip: you can lightly salt the cukes with Kosher salt and put in colander over a bowl the the fridge for a couple of hours to remove the excess water. The same trick works well for cabbage before making your own coleslaw.
